# Amaranth Ki Chikki

Ingredients


Amaranth, 250 grams
Jaggery, 750 grams
3.5 glasses of water

Method

- The process involves heating a pan over a high flame. Then stir in the entire bag of amaranth. The moment you add the amaranth to the pan, it will immediately begin to pop up.

- Once the amaranth has popped up, remove it from the pan and set it aside. Now combine some water with some jaggery in a pan and heat it up to dissolve it.

- Once the jaggery has completely dissolved, turn up the heat and bring the mixture to a boil. Then, continue cooking it on high heat until it reaches a 2/3 consistency.

- Add the amaranth to the jaggery mixture at this point. Lastly, immediately transfer the mixture to a greased surface. Pat it to level it off, and then set it away to cool.

- As soon as it has cooled, cut it into the required size pieces and store them in an airtight container. This dish requires forty minutes to prepare in total.

# Amaranth Tikki

Ingredients

1 cup of Amaranth seeds
2 cups of water
a tablespoon of oil
3 cloves of chopped garlic
1 cup of onion finely chopped
1/2 cup of finely sliced zucchini
1/2 cup of finely chopped red bell pepper
1 tsp. of each Amchoor powder, salt, and chili powder
Garam masala
1/2 tsp. of Breadcrumbs, coriander powder, and lemon zest
black pepper freshly ground

Method


- Amaranth seeds are to be boiled in two cups of water. After that, thoroughly whisk in the amaranth seeds in the water.

- Then cover the basin when the amaranth seeds have boiled. After that, turn down the heat and boil the seeds for around 20 minutes.

- When the amaranth is finished cooking, season it with sea salt and freshly ground pepper and set it aside.

- For masala: onions and garlic should be cooked until glossy in a pan with 1 tablespoon of oil. After that, stir-fry the zucchini and red pepper for around three minutes.

- Add some lemon zest, red chili powder, coriander powder, and garam masala after that, and stir-fry. After that, season with amchur and black pepper. Remove the mixture from the heat and set it aside.

- Add the boiled amaranth to the concoction. Put it away so it can cool. After that, form the patties and then breadcrumb-coat them.

- Finally, pan-fry them in two tablespoons of oil until brown. This meal requires 45 minutes to prepare in total.
