Ingredients
2 large potatoes, peeled and grated
1 medium-sized beetroot, peeled and grated
1 cup milk
1/2 cup sugar (adjust to taste)
2 tablespoons ghee (clarified butter)
1/4 teaspoon cardamom powder
2 tablespoons chopped nuts (almonds, cashews, pistachios)
A pinch of saffron strands (optional)
Desiccated coconut for garnish (optional)
Method- Heat a tablespoon of ghee in a heavy-bottomed pan or kadhai over medium heat.
- Add the grated potatoes and beetroot to the pan and sauté them for 8-10 minutes until they turn soft and tender.
- In a separate saucepan, heat the milk until it comes to a gentle boil.
- Pour the boiled milk over the sautéed potatoes and beetroot mixture.
- Stir well and let the mixture simmer on low heat until the milk is absorbed and the mixture thickens.
- Add sugar to the mixture and continue to cook, stirring occasionally, until the halwa reaches a desired consistency.
- In another small pan, heat the remaining ghee and roast the chopped nuts until golden brown.
- Add the roasted nuts, cardamom powder, and saffron strands (if using) to the halwa mixture and mix well.
