Ingredients

2 cups cauliflower florets
2 medium-sized potatoes, peeled and diced

2-3 green chilies, slit lengthwise
2 cloves of garlic, minced
1-inch piece of ginger, grated
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (adjust according to your spice preference)

Method

- Heat oil in a deep pan or kadhai over medium heat. Add the cumin seeds and allow them to splutter.

- Add the minced garlic and grated ginger. Sauté for a minute until fragrant.

- Add the chopped onions and green chilies. Sauté until the onions turn translucent and golden brown.

- Add the finely chopped tomatoes and cook until they soften and release their juices.

- Now, add the turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a minute to allow the spices to blend with the onion-tomato mixture.

- Add the diced potatoes and cauliflower florets to the pan. Mix everything together, ensuring the vegetables are well coated with the spices.

- Cover the pan and cook on low to medium heat for about 15-20 minutes or until the potatoes and cauliflower are tender. Stir occasionally to prevent sticking and ensure even cooking.

- While the Aloo Gobi is cooking, poach the eggs in a separate pot of simmering water. Crack each egg into a small bowl or ramekin and gently slide it into the water. Cook for about 3-4 minutes for a soft poached egg. Adjust the cooking time according to your preference.
