Ingredients 500 grams chicken, cut into pieces
2 onions, finely chopped
2 tomatoes, pureed
2 tablespoons ginger-garlic paste
2 tablespoons freshly ground black pepper
1 tablespoon red chili powder (adjust to taste)
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
2 green chilies, slit
Curry leaves, a handful
Fresh coriander leaves, for garnishing
Salt, to taste
Oil, for cooking
Method- Heat oil in a large skillet or kadai over medium heat. Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Now, add the tomato puree and cook until the oil starts to separate from the masala.
- Add the chicken pieces to the skillet and mix well with the masala. Cook for a few minutes until the chicken starts to brown.
- Reduce the heat to low and add the freshly ground black pepper, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the chicken evenly with the spices.
- Cover the skillet and let the chicken cook on low heat for about 20-25 minutes or until it is tender and fully cooked. Stir occasionally to prevent sticking.
- Once the chicken is cooked, add the slit green chilies and curry leaves. Mix well and cook for another 2-3 minutes to infuse the flavors.
- Sprinkle garam masala over the chicken and give it a final stir.
- Garnish with fresh coriander leaves.
