Ingredients for Chicken Cutlets

500g boneless chicken (preferably ground or finely chopped)
1 medium-sized onion, finely chopped
1 medium-sized potato, boiled and mashed
2-3 green chilies, finely chopped (adjust to taste)
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala powder
1 tablespoon fresh coriander leaves, chopped
Salt to taste
1 egg, beaten (for binding)
1/2 cup breadcrumbs (for coating)
1 tablespoon oil (for frying)

How to Make Chicken Cutlets

To make chicken cutlets, start by cooking the chicken. Heat a little oil in a pan and add the ground or finely chopped chicken. Cook it on medium heat for about 5-7 minutes until the chicken is fully cooked and all the moisture has evaporated.

Once done, set it aside to cool. In a large bowl, combine the cooked chicken with boiled and mashed potato, finely chopped onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and chopped coriander leaves. Add salt to taste and mix everything together thoroughly, ensuring the mixture is firm and not too wet. If the mixture feels soft, you can add a little more breadcrumbs to bind it together.

Next, shape the mixture into round or oval cutlets by taking small portions of it. Once shaped, dip each cutlet into the beaten egg, ensuring it’s coated well, and then roll it in breadcrumbs to give it a crispy outer layer.

In a shallow frying pan, heat some oil over medium heat. Once the oil is hot, carefully place the cutlets in the pan and fry them until golden brown and crispy on both sides. This should take around 3-4 minutes per side. Once they are fried, remove them from the pan and place them on a paper towel to drain any excess oil.
