Ingredients1 1/2 cups tightly packed spinach leaves
2 tablespoons butter + more for toasting the sandwich
3/4 cup milk
1 teaspoon maida/ plain flour
Pepper powder salt and chili flakes to taste
1/2 cup grated cheese
6 bread slices
Method- Let us begin spinach and cheese sandwich by blanching the spinach. Bring a pot full of water to rolling boil. Add thoroughly washed spinach leaves along with 1/2 teaspoon sugar. Boil for about 5-7 minutes, drain and pat dry gently. Chop the spinach leaves finely and set aside.
- Heat 2 tablespoons butter in a pan. Allow it brown a bit. Add 1 teaspoon maida/flour and roast well.
- Add 3/4 cup milk and stir well in low flame. Make sure the flour does not form lumps. You can do this by switching the flame off too to avoid lump formation.
- Allow the sauce to thicken, cook in low flame for -8 minutes.
- Add chopped spinach leaves and mix well. Add salt, pepper powder and chili flakes.
- Switch off the flame, add grated cheese and mix well. The filling for spinach and cheese sandwich is ready. Divide into 3 equal portions.
- Take 6 sandwich bread slices. Apply butter on 3 slices. Place the prepared filling in buttered slices and close with the remaining slices.
- Heat a rill pan or tava. Place a prepared sandwich and toast/grill from both sides until the sandwich turns as crispy as desired. You can use butter for toasting.
- Grill the remaining 2 sandwich in the same way. Serve spinach and cheese sandwich hot.
