Ingredients

2 cups all-purpose flour
1/4 cup melted ghee (clarified butter)
1/4 cup warm milk
1/4 cup powdered sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup yogurt
1/4 teaspoon saffron strands (optional, for flavor and color)
Nigella seeds or sesame seeds for garnish (optional)

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Total Time: 30 minutes
Servings: Makes 6 Sheermals

Method

Mixing the Dough:

- In a large mixing bowl, combine the all-purpose flour, powdered sugar, baking powder, and salt. Mix well to ensure the ingredients are evenly distributed.
- Add the melted ghee to the flour mixture and mix until it resembles breadcrumbs.
- Warm the milk slightly and dissolve the saffron strands in it (if using).
- Gradually add the saffron-infused milk and yogurt to the flour mixture, kneading gently to form a soft dough.
- If the dough feels too dry, you can add a little more milk as needed. Cover the dough and let it rest for 30 minutes.

Shaping the Sheermal:

- After the dough has rested, divide it into 6 equal portions.
- Take one portion of the dough and roll it into a smooth ball. Place it on a lightly floured surface.
- Using a rolling pin, roll out the dough ball into a flat disc, about 1/4 inch thick. You can shape it into a round or oval shape, as desired.
- Repeat the process with the remaining portions of dough.

Cooking the Sheermal:

- Heat a tawa (griddle) or a non-stick pan over medium heat.
- Carefully transfer one rolled-out Sheermal onto the hot tawa and cook for about 1 minute on one side.
- Flip the Sheermal and cook for another 1-2 minutes until both sides are lightly golden brown and cooked through.
- Repeat the cooking process with the remaining Sheermals, stacking them on a plate as they are cooked.

Serving:

- Once all the Sheermals are cooked, brush them lightly with melted ghee for extra flavor and shine.
- You can optionally sprinkle nigella seeds or sesame seeds on top for garnish.
- Serve the warm Sheermals with your favorite curry or enjoy them on their own as a delightful snack or breakfast treat.
