Diwali is festival of lights and soon after it there is a tradition to visit your relatives and friends for get together. So, for those late evening meets, try Vegetarian Chili for dinner.
IngredientsExtra-virgin olive oil3 Tbsp
Textured vegetarian protein¾ cup
Minced garlic 4 cloves
Corn kernels 1 cup
Bulgur½ cup
Chili powder 2 Tbsp
Paprika1 Tbsp
Ground cumin 2 tsp
Garlic powder 2 tsp
Ground chipotle pepper1 tsp
Cayenne pepper1/8 tsp
Salt1/2 tsp
No salt added diced tomatoes 1 can
No salt added rinsed kidney beans1 can
No salt added rinsed black beans1 can
Vegetable broth4 cups
Water2 cups
Method # Heat oil in a Dutch oven over medium heat.
# Add TVP, onion and garlic; cook stirring until the onion starts to soften 3-5 minutes.
# Add okra and corn and cook, stirring occasionally, until the Okra is starting to soften about 5 minutes.
# Add bulgur, chili powder, paprika, cumin, garlic powder, ground chipotle pepper, cayenne and salt and cook, stirring until aromatic 30 seconds to 1 minute.
# Stir in tomatoes and all the beans.
# Pour in the broth and water and bring to a boil.
# Reduce heat to a simmer, partially cover the pot and cook, stirring occasionally, until the liquid is reduced and thickened and the TVP and bulgur are tender, about 50 minutes.
