Saffron strands: A pinch (optional, soaked in warm milk)
Almonds and pistachios: 1 tablespoon, chopped (for garnish)
Ghee (clarified butter): 1 teaspoon

How to Make Gajar Ka Doodh

Start by heating 1 teaspoon of ghee in a pan over medium heat. Add 1 cup of grated carrots and sauté for 4-5 minutes until their raw aroma disappears. Meanwhile, heat 2 cups of milk in a saucepan and bring it to a gentle boil. Once the milk begins to simmer, add the sautéed carrots and stir well.

Let the mixture cook on low heat for 10-12 minutes, stirring occasionally to prevent it from sticking to the bottom. Add 2-3 tablespoons of sugar or jaggery to sweeten the milk and stir until it dissolves. Enhance the flavor by adding ¼ teaspoon of cardamom powder and a few strands of saffron soaked in warm milk.
