Ingredients1/4 cup butter
2 large sweet potatoes, peeled and chopped
3 large carrots, peeled and chopped
1 apple, peeled, cored, and chopped
1 onion, chopped
1/2 cup red lentils
1/2 teaspoon minced fresh ginger
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon paprika
4 cups vegetable broth
plain yogurt
Method- Set the stove eye to medium heat. Then, start by melting butter in a large pot.
- Add the prepared sweet potatoes, carrots, apple, and onion to the pot. Cook for about 10 minutes, stirring continuously until the onions are translucent.
- Add in the lentils, ginger, black pepper, salt, cumin, chili powder, paprika, and vegetable broth. Increase heat to high. Stir continuously until the soup begins to boil. Then, lower the heat back to medium-low.
- Cover the pot and allow the soup to simmer until the veggies and lentils are soft. This should take about 30 minutes.
- (You’ll perform this step in batches.) Pour the soup into a blender. Be sure to fill it only half full or less. Hold the lid in place and perform a few quick pulses.
- Then, set the blender to puree; continue pureeing until the soup is smooth. Transfer the smooth soup to a second pot. Continue until all of the soup is smooth and in the second pot.
- Transfer the pureed soup back to the original cooking pot. Set the stove to medium-high heat and return the soup to a simmer.
- Simmer for 10 minutes, adding water if necessary to make the soup thinner.
- Transfer the soup into bowls, and top with yogurt. Serve, and enjoy!
