Katori Dhokla is a delicious Gujarati snack that is made using a steaming method. It is a variation of the traditional dhokla recipe where the dhokla batter is steamed in small katoris or cups instead of a large pan. This makes it a perfect snack option for parties or as an evening snack. Here is the recipe for Katori Dhokla:
Ingredients: 1 cup besan (gram flour)
1/4 cup semolina (suji)
1/4 cup yogurt
1 tsp ginger paste
1 tsp green chili paste
1/4 tsp turmeric powder
1 tsp salt
1 tsp sugar
1 tsp Eno fruit salt
1 tbsp oil
1/2 cup water
Oil for greasing
Coriander leaves, finely chopped for garnishing
Method:- In a large mixing bowl, add besan, semolina, yogurt, ginger paste, green chili paste, turmeric powder, salt, sugar, and oil. Mix well.
- Gradually add water to the mixture and mix until a smooth batter is formed. Make sure there are no lumps in the batter.
- Add Eno fruit salt to the batter and mix well. The mixture will become frothy.
- Grease the katoris or cups with oil and pour the batter into them until they are 3/4th full.
- Heat water in a steamer or a large pot. Once the water starts boiling, place the katoris in the steamer or pot and steam for 10-12 minutes on medium flame.
- After 10-12 minutes, check the dhokla by inserting a toothpick in the center. If it comes out clean, the dhokla is cooked.
- Remove the katoris from the steamer or pot and let them cool down for a few minutes.
- Using a knife, gently loosen the edges of the dhokla and remove them from the katoris.
- Garnish the Katori Dhokla with chopped coriander leaves and serve hot with green chutney or tamarind chutney.
