Preparation and Cooking Time:
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Total Time: 40 minutes
Ingredients 2 cans (15 ounces each) black beans, rinsed and drained
1 small onion, finely chopped
2 cloves of garlic, minced
1 medium carrot, grated
½ cup rolled oats
½ cup breadcrumbs
2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)
2 tablespoons chopped fresh cilantro
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon smoked paprika
Salt and pepper to taste
Olive oil for cooking
Burger buns and desired toppings (lettuce, tomato, onion, avocado, etc.)
Method - In a large mixing bowl, mash the black beans using a fork or potato masher until they become partially mashed with some whole beans still remaining.
- Add the chopped onion, minced garlic, grated carrot, rolled oats, breadcrumbs, flax egg, chopped cilantro, ground cumin, chili powder, smoked paprika, salt, and pepper to the bowl with the mashed black beans.
- Mix all the ingredients together until well combined. The mixture should be slightly sticky and hold its shape when formed into patties. If the mixture is too wet, add a small amount of additional breadcrumbs until the desired consistency is reached.
- Divide the mixture into equal portions and shape each portion into a patty using your hands. Aim for a thickness of about ½ inch and a diameter that fits your burger buns.
- Heat a drizzle of olive oil in a skillet or grill pan over medium heat. Cook the veggie burgers for approximately 4-5 minutes on each side, or until they are well browned and heated through. You can also grill the burgers on an outdoor grill if preferred.
- Toast the burger buns if desired and assemble your black bean veggie burgers with your favorite toppings such as lettuce, tomato, onion, avocado, or any other condiments you prefer.
- Serve the homemade black bean veggie burgers immediately and enjoy!
