Ingredients for Corn Dosa Rice – 1 cup (preferably parboiled rice or idli rice)
Split Yellow Moong Dal – ½ cup (or you can use urad dal)
Sweet Corn Kernels – 1 cup (fresh or frozen)
Green Chilies – 2-3, chopped (adjust to taste)
Ginger – 1 inch, grated
Curry Leaves – 8-10
Salt – to taste
Water – as needed
Oil or Ghee – for cooking
Instructions for Corn Dosa Rinse the rice and moong dal under cold water until the water runs clear. Soak them together in enough water for about 4-6 hours or overnight. After soaking, drain the rice and dal mixture. In a blender, combine the soaked rice, dal, and 1 cup of sweet corn kernels. Add the chopped green chilies, grated ginger, and a few curry leaves. Blend the mixture to a smooth batter, adding water as needed to achieve a pourable consistency. Transfer the batter to a large bowl, cover it, and let it ferment in a warm place for about 6-8 hours or overnight. Fermentation will give the dosa a slightly tangy flavor and improve its texture. If you’re short on time, you can skip this step and use the batter right away. Once fermented (if you chose to ferment), mix the batter well and add salt to taste. Heat a non-stick or cast-iron skillet over medium heat. Grease it lightly with oil or ghee.
Pour a ladleful of batter onto the center of the hot skillet. Using the back of the ladle, spread the batter in a circular motion to form a thin crepe. Drizzle a little oil or ghee around the edges of the dosa. Cook until the edges start to lift and the bottom is golden brown, about 2-3 minutes. Carefully flip the dosa and cook for an additional minute on the other side until it’s golden and crispy. Remove from the skillet and set aside. Repeat the process with the remaining batter, greasing the skillet as needed. Serve the corn dosa hot with coconut chutney, sambar, or any dipping sauce of your choice.
