Pista Barfi Recipe for Diwali

How to Make Pista Barfi

To make Pista Barfi, begin by grinding one cup of shelled pistachios into a fine powder using a food processor or grinder, taking care not to create a paste. Set the pistachio powder aside. In a heavy-bottomed pan, combine three-quarters of a cup of sugar with half a cup of water. Heat the mixture over medium flame, stirring until the sugar dissolves completely. Allow it to boil for a few minutes until it reaches a one-string consistency, meaning that a drop of the syrup forms a single thread between your fingers. Once the syrup is ready, add half a cup of milk and the prepared pistachio powder, stirring well to combine. Cook the mixture on low heat, stirring continuously, and add two tablespoons of ghee. Keep stirring until the mixture thickens and starts to pull away from the sides of the pan, which usually takes around 10 to 15 minutes.

Next, add half a teaspoon of cardamom powder for flavor and mix thoroughly. Grease a square or rectangular tray with ghee, then pour the pistachio mixture into the tray, spreading it evenly with a spatula. Press it down gently to create a smooth surface. For an extra touch, you can garnish the top with finely chopped pistachios or almonds. Allow the Pista Barfi to cool at room temperature for a few hours until it sets completely.
