How to Make Til GajakTo make Til Gajak, start by roasting the sesame seeds. Heat a pan on medium flame and dry roast the sesame seeds until they turn light golden and release a nutty aroma. This should take around 4-5 minutes. Once roasted, transfer the seeds into a large bowl and set them aside. In the same pan, add water and grated jaggery, then heat it over medium flame. Stir continuously until the jaggery completely dissolves. Let the mixture simmer for 3-4 minutes until it thickens slightly.
To check the consistency, drop a small amount of syrup into cold water—if it forms a hard ball, it’s ready. Once the syrup reaches the right consistency, add the roasted sesame seeds to the pan and mix well, making sure the seeds are evenly coated with the jaggery syrup.
