Ingredients 1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs, room temperature
1/2 cup whole milk
1/2 cup heavy cream
1 lb semisweet chocolate, chopped
1/2 cup unsalted butter, room temperature
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup heavy cream
Method- Preheat oven to 350°F. Grease an 8-inch cake pan and set aside.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- Add dry ingredients and milk to butter mixture, alternating and beginning and ending with dry ingredients. Mix until just combined.
- Pour batter into prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- In a large bowl, place chopped chocolate and set aside.
- In a small saucepan, heat heavy cream over medium heat until it comes to a simmer. Pour hot cream over the chopped chocolate and let it sit for a few minutes. Whisk until smooth and shiny.
- Add butter, powdered sugar, and vanilla extract to the chocolate mixture and whisk until smooth.
- Let the mixture cool to room temperature, then whisk in heavy cream until the mixture becomes lighter in color and fluffy.
- Cut the cake into two layers and spread a thick layer of chocolate truffle filling on top of the first layer. Place the second layer on top and spread another layer of chocolate truffle filling on top.
