How to Make Lehsuni PalakTo prepare Lehsuni Palak, start by blanching 500g of washed and chopped spinach in boiling water for 2-3 minutes. Drain and immediately transfer it to cold water to retain its vibrant green color. Blend the spinach into a smooth puree and set it aside. Heat 2 tablespoons of oil or ghee in a pan over medium heat and add 1 teaspoon of cumin seeds.
Once they splutter, add 8-10 finely chopped garlic cloves and sauté until golden brown, reserving a small portion for garnishing. Next, add 1 finely chopped onion and cook until translucent. Stir in 1-2 finely chopped green chilies, ½ teaspoon of turmeric powder, and ½ teaspoon of red chili powder, then mix in 1 finely chopped tomato.
Cook the mixture until the tomato softens and the oil separates from the masala. Pour the spinach puree into the pan, mix it with the masala, and let it simmer on low heat for 5-7 minutes, adjusting the consistency with water if needed.
Season with ½ teaspoon of garam masala and salt to taste. Garnish with the reserved golden garlic and a drizzle of fresh cream or yogurt, then serve hot with roti, paratha, or steamed rice.
