For the Cookies:

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
Zest of one lemon (optional)

For the Filling:


1/2 cup raspberry or strawberry jam (or your favorite fruit jam)

For Dusting:

Confectioners' sugar (for sprinkling)

Method

- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

- In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.

- In a separate large mixing bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.

- Add the egg, pure vanilla extract, and lemon zest (if using) to the butter-sugar mixture. Mix until well combined.

- Gradually add the sifted dry ingredients to the wet mixture. Mix until a smooth dough forms.

- For the top halves, use a smaller shape within the Linzer cutter (usually a small circle or heart) to create a cutout in the center of each cookie.

- Place the cookies on the prepared baking sheets and bake for 10-12 minutes, or until they are just beginning to turn golden at the edges. Be careful not to overbake.

- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
