How to Make Malai BarfiTo make Malai Barfi, begin by heating 2 tablespoons of ghee in a heavy-bottomed pan over medium heat. Once the ghee has melted, add 1 cup of fresh cream and stir well to combine. Gradually mix in 1 cup of milk powder, continuing to stir until the mixture is well blended. Next, add ¾ cup of sugar to the cream and milk powder mixture, stirring continuously to prevent lumps from forming. Cook the mixture on low heat, stirring frequently, until it thickens and starts to pull away from the sides of the pan, which usually takes about 10 to 15 minutes. Once the mixture has thickened, add ½ teaspoon of cardamom powder for flavor, mixing well to ensure the cardamom is evenly distributed throughout.
