Cooking Time:

The cooking time for Galouti Kebab is relatively short, making it an ideal choice for quick yet flavorful meals. Once the meat is marinated, it takes around 15 to 20 minutes to cook the kebabs to perfection.

Ingredients

500 grams of finely minced meat (traditionally lamb or mutton, but you can also use beef or chicken)
2 tablespoons of raw papaya paste (acts as a meat tenderizer)
2 tablespoons of finely chopped onions
2 tablespoons of finely chopped green chilies
2 tablespoons of ginger-garlic paste
1 tablespoon of roasted gram flour (besan)
1 tablespoon of melted ghee or clarified butter
1 teaspoon of red chili powder
1 teaspoon of garam masala powder
1 teaspoon of dried raw mango powder (amchur)
1 teaspoon of roasted cumin powder
A pinch of saffron strands (optional)
Salt to taste
Vegetable oil for shallow frying

Method

- In a mixing bowl, combine the finely minced meat, raw papaya paste, chopped onions, green chilies, ginger-garlic paste, roasted gram flour, melted ghee, red chili powder, garam masala powder, dried raw mango powder, roasted cumin powder, saffron strands (if using), and salt. Mix well to ensure that all the ingredients are evenly incorporated.

- Cover the bowl with cling wrap and let the meat marinate for at least 2 hours or overnight in the refrigerator. This allows the flavors to meld together and enhances the tenderness of the kebabs.

- After marination, take the meat mixture out of the refrigerator and allow it to come to room temperature.

- Divide the mixture into small portions and shape them into round kebabs or patties. Ensure that the kebabs are not too thick or too thin for even cooking.

- Heat a non-stick pan or a tawa and brush it with a little vegetable oil. Place the kebabs on the hot pan and cook them on medium heat for approximately 5 minutes on each side or until they turn golden brown.

- Once the kebabs are cooked to perfection, remove them from the pan and place them on a paper towel to absorb any excess oil.

- Serve the Galouti Kebabs hot with mint chutney, sliced onions, and lemon wedges. They can be enjoyed as an appetizer or as a main course accompanied by naan or roomali roti.
