Recipe - Mastering Chicken Changezi

Ingredients

500g boneless chicken, cut into cubes
1 cup yogurt, whisked
2 large onions, finely sliced
2 tomatoes, pureed
4 tablespoons oil or ghee
1 teaspoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon black pepper powder
Salt to taste
Fresh coriander leaves for garnish
Ginger julienne for garnish

Method

- In a bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Let it marinate for at least 30 minutes to allow the flavors to meld.

- Heat oil or ghee in a pan over medium heat. Add the sliced onions and sauté until they turn golden brown and caramelized.

- Add the marinated chicken to the pan and cook until it turns white and starts to brown slightly.

- Add the tomato puree, garam masala, ground coriander, ground cumin, black pepper powder, and salt. Mix well, cover, and let it cook on low heat for about 15-20 minutes, allowing the chicken to absorb the flavors.
