Recipe- Perfect for Breakfast Bread Omelette Sandwich

Bread Omelette sandwich is one of the most popular Indian breakfasts as well as street food. It's a fairly simple recipe. This healthy breakfast sandwich comforting and filling breakfast to start the day with veggies and protein.

Ingredients

2 slice cheese Cheddar Cheese
2 tomato
¼ Avocado
4 egg
salt to taste
1 teaspoon red chilli
2 tablespoon Oil
2 buns

Method

- Break an egg in a bowl add salt, red chilli flakes.

- Slice tomatoes and avocado thinly.

- Grease a non stick pan or cast iron pan, pour egg mix over it till set and light brown from one side, flip over and cook till light brown from other side as well.

- Remove it to a plate and similarly make two omelettes and fold them into triangles.

- In a bowl add rinsed arugula leaves. Drizzle with some olive oil and salt and mix well.

- Now slice buns into two. Toast the buns.

- Apply thin layer of hung curd or mayonaise on one side. Place layer of sliced tomatoes on the bread.

- Place folded omelet onto it. Follow it up with sliced avocado amd seasoned arugula.

- Top with another bread slice and press lightly when trimming the sides of bread.

- Serve with garam garam cup of adrak chai (Hot ginger tea)
