To achieve the perfect crunch, dip the nuggets in a cornflour slurry and coat them with breadcrumbs. If you’re out of breadcrumbs, you can skip this step. For a cheesy twist, add a small piece of cheese inside each nugget before frying. Serve them with tomato ketchup and mint chutney for a delightful snack.
Ingredients of Poha Nuggets1 cup poha (flattened rice)
2 medium potatoes, boiled and mashed
1 small onion, finely chopped
1/2 capsicum, finely chopped
1/2 cup peas, boiled
2 tablespoons cornflour
1/2 cup breadcrumbs (optional)
Salt and spices to taste (red chili powder, cumin powder, etc.)
2 tablespoons oil
Small cheese cubes (optional)
How to make Poha Nuggets- Wash and soak the poha in water for a few minutes until it softens. Drain and set aside.
- In a large bowl, combine the soaked poha, mashed potatoes, chopped onion, capsicum, and peas.
- Add salt and spices to taste. Mix well to form a dough-like consistency.
- Take small portions of the mixture and shape them into nuggets.
- Optionally, insert a small cheese cube in the center of each nugget and seal it well.
- Prepare a slurry by mixing cornflour with a little water.
- Dip each nugget into the slurry and coat it with breadcrumbs (if using).
- Heat 2 tablespoons of oil in a pan over medium heat.
- Shallow fry the nuggets until they are golden brown and crispy on all sides, turning occasionally.
- Serve the crispy nuggets hot with tomato ketchup and mint chutney.
