We all love to munch on a crispy and crunchy snack every once in a while. Especially when we are binge-watching something on TV or enjoying an evening drink like tea or coffee.
That is why I always like to make and stock up on such snacks. I also try to make healthier versions of them so that I can enjoy them guilt-free.

Lemon Cream Cheese Bites
Ingredients4 oz cream cheese
3 cups powdered sugar
1/2 tsp lemon extract
1/8 tsp turmeric powder
Method- We need softened cream cheese at room temperature for this recipe. Take it out of the fridge well in advance for it to soften. If you forgot, put it in the microwave for 30 seconds.
- Add the softened cream cheese to a mixing bowl. Beat it using a hand mixer or a whisk until stiff peaks are formed.
- Then add turmeric powder, lemon extract and powdered sugar to the bowl. Continue to beat till well combined.
- It should come together like a soft dough. You should be able to shape them like a play-doh. You can also place it in the fridge after wrapping it in a cling wrap to help set.
- Use your hand to shape them into small 1/2 balls and place them on a wax paper or parchment lined tray.
- Press flat with a fork to give them a design and then chill in refrigerator or freezer for 2-3 hours or until ready to serve.
# Moong Dal Namkeen
Ingredients
1 cup Moong dal
1 tsp Baking soda
1/2 tsp Turmeric powder
1 tsp Chilly powder
2 tsp Oil
Salt
Method- Soak moong dal with baking soda for at least 2 hours.
- Drain the water and dry the dal completely using a kitchen towel. Spread on a plate and let it dry for 45 minutes to one hour.
- Place the dried dal in a microwave-safe flat dish (I used a flat glass dish). Add oil and mix it well. Microwave it on high for 8-10 minutes.
- The moong dal will get crunchy after 8 minutes. (Continue cooking it in the microwave till it gets crispy. Every microwave is different so monitor the cooking time)
- Now add salt, chilly powder, and turmeric powder to it.
- Mix it well. Allow it cool down completely and then transfer to an airtight container.
# Rose Sandesh
Ingredients2 cups paneer
6-8 tbsp powdered sugar
1/4 tsp cardamom powder
2 tbsp rose syrup
12 Almond slices for garnish
Method- If using frozen paneer, transfer it to the fridge the previous night. On the next day, let it thaw over the countertop till it softens. Then grate or crumble paneer.
- Transfer to a mixing bowl. Add powdered sugar to it.
- Then add cardamom powder.
- Mix it all together.
- Transfer the contents to a mixer grinder jar. Add rose syrup and pulse for 10 seconds or until smooth. This is just to bring the mixture together evenly.
- Transfer the mixture back to the mixing bowl. Shape them into your desired shape and place them on a platter.
- Refrigerate it for 30 minutes and then serve this easy no-bake dessert.
