If you’re looking for the perfect holiday breakfast, look no further. This chia parfait is not only beautiful…it’s healthy! And healthy is important…especially during the holidays. Because let’s be honest, I know you may have a little cheat here and there with some sweets and dark chocolate. Am I right?!
When I first focused on “real food,” one of the first bloggers I followed was Hannah Healy from Healy Eats Real. Her website is an abundance of delicious, healthy recipes and nutrition tips.
Ingredients
1 1/2 cup coconut milk
1/4 cup chia seeds
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 pomegranate
1/4 cup slivered almonds
Method* Mix the coconut milk, chia, maple and vanilla extract together in a bowl.
* Stir or whisk until well combined. Cover and place into the refrigerator. (*This is best done overnight, but can be done during the day with a minimum 4-5 hours of refrigeration).
* Remove the chia mix from the refrigerator and dollop a few large spoonfuls between two glasses.
* Divide the slivered almonds on top, then some pomegranate seeds.
* Dollop the remainder of the chia mix in the glasses, followed by the rest of the pomegranate seeds.
* Serve immediately.
