Crisp savoury pancakes prepared from semolina batter and topped with onions, tomatoes and green chillies. A simple recipe for a delicious breakfast.
Ingredients1 cup coarse semolina
1/2 cup yogurt
1 medium sized onion, finely chopped
1 large tomato, finely chopped
2 green chillies, finely chopped
2 tablespoons finely chopped coriander leaves
2 tablespoons oil
Salt to taste
Method- Combine semolina with yogurt , salt and about half cup water in a large bowl. Mix well to make a batter.
- Heat a flat non-stick pan and drizzle about half teaspoon oil. Pour about 3 tablespoons of batter and spread it evenly to make a round uttapam.
- Gently place a heart-shaped cookie cutter in the centre of the uttapam.
- Scatter chopped onions, green chillies and coriander leaves on the uttapam leaving the part of uttapam inside the cookie cutter.
- Fill the part of uttapam inside the cookie cutter with chopped tomatoes.
- Carefully remove the cookie cutter without breaking the uttapam. Drizzle about half teaspoon oil on top of the uttapam.
- When the base of the uttapam turns crisp and easily comes off the pan, flip it carefully with the help of a spatula. Cook for about 30 seconds.
- Repeat the same process to make more uttapams with the remaining batter.
- Serve hot with mint chutney and cafe mocha.
