Recipe- Crispy Papdi Puri For Chaat

Papdi Puri is a versatile crispy snack mostly use in Indian Chaat recipes like papdi chaat, sev puri or bhel puri. Papdi Puri is a perfect tea time snack too.

Papdis are crispy small flat Puris made of plain flour spiced up with salt and carom seeds. They add crunch to most chaat recipes. The dough used to prepare Papdi Puri is usually very stiff. These are easily available in the market under so many different brand names and can be made at home too.

Ingredients

1 Cup All-purpose flour/Maida
1 tsp Carom seeds/Ajwain
Salt
2 tbsp oil
Oil for deep frying

Method

* In mixing bowl, add flour, carom seeds, salt and oil. Mix all ingredients very well using your fingertips.

* Start kneading the dough. Add little water, make smooth dough and cover it for 10-15 minutes.

* Divide the dough into 3-4 portions and make a smooth balls.

* Take one ball roll it into a big circle, do not make very thin or very thick.

* Now using the cookie cutter or small katori, cut it into small-small size circles/puris. Repeat the same method for remaining balls and make more small circles or small puris.

* Take a fork and prick the surface of all circles and keep aside.

* Heat oil for deep frying, once oil is hot enough, drop few rolled puris into the hot oil and fry until it becomes golden brown on medium flame.

* Remove the fried puris using slotted on paper towel to absorb excess oil.
