Plant-based snacks are the most searched on my blog! That is why I thought of sharing this easy recipe of a perfectly sweet and seriously satisfying vegan snack that will be made on a repeat mode once you start having them! That is what has happened to me. I have always read about these pick-me-up kinds of plant-based snacks that are great to munch between meals, pre/post-workout, or satisfy those midnight craving, but never really got to make something for us.
Ingredients1 cup frozen raspberries
2 cups unsweetened desiccated coconut
1 cup raw cashews
1/2 cup dried dates
1 tsp vanilla extract
1/4 tsp salt
Method- In the food processor add desiccated coconut, cashews, and dates.
- Then add vanilla extract, a pinch of salt, and frozen raspberries. Pulse till the mixture is broken down, and is well combined and sticking together.
- Transfer it to a plate and using your hands, shape the mixture into tbsp sized balls. At this point, you can leave it as is or roll it over some desiccated coconut.
- Place them in the fridge for 30 minutes to set.
