Recipe- Delicious Chocolate Biscuit Cake

This cake recipe is a very easy and simple. It can be made from just 3 ingredients available in your kitchen. Also we will make icing from minimum ingredients and quickly.

Ingredients:

300 grams / 2 packs Bourbon biscuits
3 tsp Powdered sugar
1 cup Milk
1 tsp Coffee (1/2 tsp instant coffee powder dissolved in 2 tsp Water & heated)
3~4 drops Vanilla essences
1 tsp Eno fruit salt
Chopped Walnuts (Optional)1/4 cup Sugar
2 tbsp Milk
2 tbsp unsweetened Cocoa powder
2 tsp Butter
Sugar syrup (2 tsp Sugar dissolved in 5~6 tap water)

Method

* Take bourbon biscuits.

* You can use any brand bourbon biscuit or loose bourbon biscuits or any other chocolate biscuit. Blend the biscuits into powder in mixer.

* Transfer the powdered biscuits into a bowl.

* Add powdered sugar and mix well.

* You can skip powdered sugar if you don’t want. You can blend powdered sugar with biscuits in blender.

* Add milk, coffee, vanilla essence and mix well.

* Add Eno fruit salt and mix well. Use plane eno and not a flavoured one.

* Line up the baking tray with wax paper at the base and pour the cake batter into it.

* Add walnuts and spread well.

* Walnuts are optional. You can skip it. You can add choco chips if you want.

* Tap the tray really good so that air bubbles if any will be removed.

* Preheat the cooker on medium heat for 10 minutes.

* Place an empty pot at the base and a dish on it.

* Place the cake tray on it.

* Remove the whistle and rubber ring form the lid, close the cooker and bake on medium heat for about 20-25 minutes.

* After about 25 minutes turn off the gas and let the cake be in the cooker for another 5 minutes.

* Insert a toothpick in the cake.

* If it comes out clean it means the cake is baked well.

* Let the cake cool down for another 10 minutes.

* Heat up a pan on medium heat and add sugar.

* Add milk and let the sugar melt in it.

* When sugar melts add cocoa powder and mix well. No lumps of cocoa powder should be formed.

* When cocoa powder melts well add butter and mix well. Butter gives nice glaze.

* Cook for just about 2 minutes.

* After about 2 minutes turn off the gas and let the mixture cool down.

* No need to transfer it into freeze. Let it cool down at room temperature only.

* The chocolate glaze is all ready. After about 10 minutes of cooling the cake loosen the edges with a knife and flip the cake over into a dish.

* Remove the wax paper and let the cake cool down completely.

* Spread a little sugar syrup on the cake so that it will remain moist.

* Spread the chocolate glaze evenly on the cake and let it set for a while.

* Garnish with walnuts along the edges.

* Chocolate biscuit cake is all ready.
