Bafla is nothing but Rajasthani style bati. Many people may deny it and will say that bafla is something different . But I found it the same food except the boiling part. Bafla is first boiled and then bake in tandoor whereas normally bati is directly baked in oven/tandoor. So you can say this food is different one or simply say this bafla bati.
Ingredients1.5 cups whole wheat flour (atta)
½ cup sooji/semolina
2.5 teaspoons roughly crushed spices (Equal portion of ajwain, cumin, coriander & fennel)
Salt to taste
1 teaspoon turmeric (haldi) powder
1 teaspoon baking powder
1 tablespoon refined oil
1 tablespoon ghee
Method* Take whole wheat flour, sooji, spices, turmeric powder, baking powder, salt, refined oil in a large bowl mix all
Now add water and knead to make soft & smooth dough, rest for 10 minutes
* Mean while boil water in a large pot and
* Now make small dough from that big dough and press those small doughs with your both palms to give perfect shape for bafla
* Now put all those bafla into water and cook for next 8-10 minutes
* Once balfa is cooked then those will start floating in water, some of those may stucked at bottom due to stickiness, so you need to make those free by using a spoon/belon etc
* Now take out each of those cooked bafla rest those for 5 minutes
* Meanwhile heat a tandoor/kadai and put those bafla and cook again both sides of those bafla
* Cook till each bafla is dry & turns into slightly golden colour
* Now take all those bafla and spread ghee over those bafla.
