Vegan Potato Latkes or Vegan Potato Pancakes are easy and delicious vegan potato dishes. Make them for your breakfast or as sides, vegan potato pancakes are yummy with crispy sides and a softer center. Originally latkes are Jewish Potato Pancakes. These are pan-fried potato pancakes. Authentically Latkes are made with shredded potatoes, eggs, onions, and salt. Often flour, breadcrumbs are used for binding purposes. Eggs also help in binding potatoes.
Ingredients1 lb potatoes
2 tbsp refined flour all purpose flour
1 tbsp corn starch
2 - 3 tbsp green onions
1/2 tsp salt to taste
1/2 tsp black pepper
1/4 tsp baking powder
1/2 cup refined oil to shallow fry
2 tbsp non dairy milk (optional)
1/2 tsp garlic powder
Method- Peel the skin of potatoes.
- Wash off and grate potatoes using a large perforated cheese grater or food processor.
- Now squeeze out as much water as you can using a paper napkin.
- Mix all ingredients mentioned above. (except oil)
- Stir the mixture well.
- Heat some oil in a pan.
- When the oil is hot put 2 tbsp of batter and spread it lightly by pressing with the backside of the spoon.
- Flip to other side and pan fry till both sides are golden and crisp.
- Remove from oil and place on a paper napkin to soak excess oil.
- Serve them hot with your favourite dip or sauce.
Air Fryer Potato Latkes
- Preheat the air fryer at 400 F for 4 minutes.
- Place the potato cakes in the air fryer basket.
- Start the air fryer at 400 F for 7 minutes.
- Then flip the latkes and again cook for 4 - 5 minutes till it's crispy and cooked
