Mushrooms are not so popular as it is in northern Indian states. I used to stay in Delhi where it is so popular and many local stores also sell mushrooms. But in Kolkata, it is not so popular because most people eat nonvegetarian. Here fish is a common item in the everyday diet. People eat meat so regularly. So very few people eat mushroom and most of those people eat mushrooms occasionally.
Though there are various types of edible mushrooms available across the country. But one or two types of mushrooms are available here in some specific shops. I mostly eat button mushrooms what I used to buy from local shops when I was in Delhi. But I never tried oyster mushroom there. In Kolkata, many stores sell this oyster mushrooms along with button mushrooms too. So I used that to make this special oyster mushroom curry and surprisingly it was so delicious.
Ingredients
150-200 gm oyster mushroom, chopped
1 large size potato, cut into small cubes
10-12 pyaz koli, onion flower bud with its stalk (Spring onion)
1 inch size ginger, grated or paste
7-8 garlic cloves, paste or finely chopped
4 green chillies, cut into pieces
2 teaspoons soy sauce
2 teaspoons turmeric powder
1 teaspoon red chilli powder
Salt to taste
2 tablespoons any vegetable oil
Method
- Heat oil in a kadai and add small potato cubes and saute till those are half fried
- Now remove those fried potatoes and add garlic paste & ginger paste and saute till nice aroma comes out
- Now add finely chopped oyster mushroom and saute for another 3 minutes
- Then add soy sauce, turmeric powder, red chilli powder and stir to mix all
- Add semi fried potato cubes & chopped stalk of onion bud too and cook for another 2-3 minutes and pour ½ cup water
- Now stir it and cover it with a lid and cook over a low flame for next 4-5 minutes
- Switch off the fire when it reached desired consistency or thickness
- Serve it with roti or cooked rice.
