This easy raspberry overnight oats breakfast is loaded with everything that is good for you! It starts with old-fashioned oats, chia seeds, a little Greek yogurt, and some honey for sweetness. I then mix this up in a jar, and let it refrigerate overnight. When the morning comes I mix in some almonds for a little extra protein and crunch, and some beautiful, fresh raspberries. Not only do you have a healthy, ready-made breakfast, it will stay with you keeping you full all the way to lunch time!
Ingredients1 1/2 cups (135g) rolled oats
1/3 cup (70g) white chia seeds
200g fresh or frozen raspberries
2 1/4 cups (560ml) reduced-fat milk
1 tbsp honey
Method# Combine oats and chia seeds in a large bowl. Place raspberries in a jug. Use the back of a wooden spoon to lightly crush. Add the milk and honey to the raspberry and stir to combine.
# Add the raspberry mixture to the oat mixture and stir to combine. Cover with plastic wrap. Place in the fridge overnight to soak.
# Spoon the oat mixture evenly into serving bowls or jars.
