Hara Bhara Kabab (spinach and green peas cutlet) is a spicy and healthy vegetarian snack or starter. It is made with spinach, green peas, potato and some spices.
Ingredients½ cup green peas
1 cup parboiled and grated potato
4-5 green chilli
1 cup spinach (palak), chopped
¼ cup mint leaves (pudina) (optional)
1 tsp ginger, grated
2 tbsp fresh coriander, chopped
1 tsp roasted cumin powder(jeera)
1 tsp coriander powder (dhania)
1 tsp garam masala
1 tsp amchur powder or lemon juice
1 tsp chaat masala
2 tbsp roasted gram flour (besan)
2 tbsp bread crumbs for binding
2 tsp oil
Salt to taste
Oil for frying
Few cashew nuts, halved
Method* Peel and boil potatoes and peas in pressure cooker for 1 whistle.
* Blanch the spinach for 2 minutes. Drain the water using colander and immediately pour the cold water and drain the cold water using colander again.
* Combine together boiled green peas, blanched spinach, green chillies, ginger, mint leaves and fresh chopped coriander and grind them coarsely.
* Heat the oil in a pan, fry the grated mixture till it becomes little dry.
* Grate the par boiled potatoes in a bowl. Add cumin powder, coriander powder, garam masala, amchur powder, chaat masala, roasted gram flour, bread crumbs and salt.
* Now add the grinded mixture to it and mix well. If the mixture is sticky, add more bread crumbs to it and mix well.
* Grease some oil on palms and make equal and round patties from the mixture. Place the cashew in center.
* Heat a pan on a medium flame. Drizzle little oil on pan.
* Place 2-3 patties on the pan and shallow fry the patties by drizzling some oil.
* Cook both sides till it turns golden brown.
* Remove and transfer it on an absorbent paper to remove the excess oil from it.
* Serve hot with chutney or ketchup or mint yogurt dip.
