Ingredients1/2 cup applesauce, unsweetened
1/2 cup Greek yogurt, plain
1 large egg
1 teaspoon vanilla extract
1/3 cup sugar
1 cup flour, whole wheat
1 cup flour, all-purpose
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cup peaches, sliced fresh or frozen
Method- Preheat oven to 350°F. Place paper liners into muffin tin, or grease muffin tin well. Set frozen peaches out to thaw if using frozen.
- Mix together applesauce, yogurt, egg, vanilla, and sugar until creamy.
- Add flours, baking soda, cinnamon, and salt to the sugar mixture and stir until combined.
- Chop peaches into bite-sized pieces and fold into batter.
- Distribute batter evenly among paper liners. Sprinkle with coarse sugar, if desired.
- Bake for 15-20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
