Ingredients* 4 bread slices
2 cups finely chopped spinach
1/2 cup sweet corn
1 small onion, finely chopped
1 teaspoon finely chopped garlic
1 green chilli, finely chopped (optional)
2 teaspoons butter
2 tablespoons grated cheese
Salt to taste
Method* Heat 1 teaspoon butter in a large non-stick pan and add the chopped garlic & onions. Sauté for about 30 seconds.
* Add the spinach, sweet corn, green chilli and salt. Sauté for about 30-60 seconds. Do not overcook the spinach otherwise it will lose its taste, nutrients and bright green colour.
* Heat a flat non-stick pan and grease it with butter. Place 1-2 bread slices on it depending upon the size of the pan. Let the bread slices turn light brown and crispy from one side. Flip them over using a spatula and reduce the heat to low.
* Spread the prepared spinach & sweet corn topping generously on the toasts. Sprinkle some grated cheese. Cover the pan for about a minute or till the cheese gets melted.
* Repeat the same process for the remaining bread slices.
* Serve hot.
