Recipe- Healthy and Nutritious Beetroot Pasta

Beetroot pasta recipe with step by step pictures and video. This is really a very quick recipe that even before the pasta gets cooked the beetroot sauce gets ready, yes you heard it right.

Beetroot pasta was new to me until I saw it in Nadiyas cooking show in Netflix. It was the quickest pasta recipe I had ever seen so I thought should give this a try. I did tweak the recipe a bit to suit our taste still it turned out so delicious that mittu wanted me to make this often.

Ingredients

1.5 cups fusili pasta
4 cups water
salt to taste

For Beetroot Sauce


1 small sized beetroot
2 nos red chilli
2 cloves garlic
2 tbsp olive oil
salt to taste

Seasoning


Cheese
lemon juice
mixed herbs
spring onion

Method

* To begin with first add water.

* Boil well add salt and few drops of oil.

* Add pasta. I used wheat pasta.

* Cook well.It takes atleast 7-10 mins to cook, depends on pasta variety too.

* Keep an eye and keep checking.

* Check by cutting it with a spoon.If it cuts through easily then pasta is done.Switch off.

* Drain immediately. Rinse with cold water to prevent from further cooking. Set aside.

* Pressure cook beetroot along with little water for 3-4 whistles. Reserve the water and set aside.Cool down.

* Add it to blender along with red chillies, garlic and olive oil.

* Add reserved beets cooked water little by little and blend it to a smooth puree. That's it beetroot pasta sauce ready.

* Add this to cooked pasta

* Mix it well.

* Transfer to serving plate, sprinkle cheese, mixed herbs or oregano, add a dash of lemon juice along with a sprinkle of spring onion.Serve.
