Tender paneer cubes dunked in a luscious green and velvety spinach gravy. It is a popular vegetarian dish in restaurants, usually prepared using loads of cream. Enjoy preparing healthy version of this dish at home without compromising on taste.
Ingredients500g washed spinach
200g paneer (cubed)
2 tablespoons Chana Dal (Split Bengal Gram)
1 large onion, finely chopped
2 tomatoes, finely chopped
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger
1 tablespoon finely chopped green chillies or to taste
2 tablespoons oil
Salt to taste
Method* Combine chana dal with half cup of water in a pressure cooker and pressure cook on high heat for 4 whistles and then on low heat for 5-7 minutes.
* Let the steam escape before opening the lid of the pressure cooker.
* Add the washed spinach leaves to the cooked chana dal and cook for 1-2 minutes until the spinach leaves get wilted. Keep it aside to let it cool.
* Once cooled, blend it into a smooth paste with the help of a hand blender. Add little water before blending if required.
* Heat oil in a pan. Add chopped garlic and onions and saute till they turn golden brown in colour.
* Add chopped tomatoes, ginger, green chillies and salt . Cook on high heat stirring continuously till the mixture leaves oil.
* Add the blended spinach and paneer cubes. Mix well and cook for 1-2 minutes.
* Serve hot with roti or naan.
