Indian summer drink, Aam Panna is made with unripe green mangoes and an assortment of spices. The drink is known for it’s heat-resistant properties.I hope you guys are not getting tired of my mango recipes, I promise I will take a break (or I will try!!) after this one. However this recipe is different because it’s not made using ripe mangoes in stead it’s made with raw mangoes. Aam Panna (aam=mango in hindi) is a summer drink which is made in India during summer months to beat the heat.
Aam panna is made using those raw green mangoes, we call them kairi. The raw mangoes are cooked and then blended with spices. The spices and raw mangoes have a cooling effect and hence this drink is exclusively made during summers. It also prevents excessive loss of sodium chloride due to excessive sweating. Not to mention, it’s pretty delicious too!
Ingredients350 grams raw green mangoes around 6 small
4 cups water divided
3/4 cup granulated white sugar
1.5 teaspoon cumin powder
1/4 teaspoon black pepper or as needed
1 teaspoon black salt
25-30 mint leaves
Method* Peel the raw mangoes and then cut them into small pieces.
* Transfer the cut pieces to a pan and add 1 cup water to it.
* Cook on medium heat till the mangoes pieces are soft, around 10 minutes.
* Remove pan from heat and transfer the softened mango (along with the water in which it was cooked) to a blender. Let it cool down a little.
* Add 3 cups cold water, mint leaves and sugar. Blend to a smooth paste.
* Strain the liquid into another bowl, add cumin powder, black salt and black pepper. Mix till everything is well combined.
* Transfer aam panna to a glass bottle and keep refrigerated.
* To serve, fill 2/3rd to 3/4th of a glass with aam panna mixture, fill remaining with cold water and serve chilled with fresh mint leaves.
