Coconut burfi is a very popular Indian sweet liked by everyone. These are very easy to make, are full of nutrition and taste heavenly. There are many ways to prepare this amazing burfi. The recipe which I am using here is very simple and requires minimum effort.
We can use readymade shredded coconut for this recipe but I really like the flavour offresh coconut. Fresh coconut is highly nutritious and rich in fibre, vitamins
and minerals. Coconut is called ‘the tree of life’ or ‘the tree of thousand uses’ because of itsmany uses and nutritional benefits.Thisrecipehas added benefits of milk.
Ingredients1 fresh coconut
1 litre milk
1 cup sugar
1 tbsp ghee
¼ tsp cardamom powder
Method- Remove shell of the coconut. Wash thoroughly and remove itsbrown skin.
- Use only the white part for this recipe because it gives burfi a nice white colour.
- The brown covering changes the colour of the burfi. Grate the coconut using grater.
- You can run it in a mixer too but it should be a little coarse.
- In a large heavy saucepan bring milk to a boil over medium high heat, stirring occasionally.
- Reduce the heat if the milk starts to boil over.
- Now stir in the grated coconut and let it simmer on low flame for approximately ½ hour.
- When the mixture thickens and there is no milk visible, add the sugar.
- Turn the flame on high and keep stirring continuously.
- Add ghee and cardamom powder when the mixture thickens and stir for 2 minutes.
- The mixture will leave the sides of the pan when it is ready.
- Immediately pour this mixture in a flat greased tray and level it evenly with a greased spatula.
- Cool at room temperature.
- Cut into square or diamond pieces. Refrigerate burfis in an air tight container.
