Recipe- Popular Street Style Mushroom Manchurian

Mushroom manchurian is my favorite among mushroom starters Indian chinese style. Manchurian is India’s most loved Indo Chinese dish and no Indian chinese meal is ever complete without it, bet it a wet or dry manchurian. All over India, you will find majority of the Indian Chinese street food hawkers or restaurants boast of manchurian varieties like the ever popular gobi manchurian, vegetable manchurian, chicken manchurian, idli manchurian, baby corn manchurian and corn manchurian.


Ingredients


Mushrooms 200 gms, clean, wash and drain
All purpose flour 2 tbsps (maida)
Cornflour 3 tbsps
Ginger garlic green chili paste 1 tsp
Water approx 1/3 cup
Salt to taste
Oil for deep frying

For sauce:


Spring onions 2, whites and greens, finely chopped
Capsicum 1/2, cut into bite sized pieces
Green chilis 1, finely chopped
Garlic 3 cloves, finely minced
Ginger 1/2 piece, finely minced
Red chili powder 1/2 tsp (preferably Kashmiri)
Soy sauce 1 tsp
Green chili sauce 1 1/2 tsps
Vinegar 1 tsp
Tomato sauce 1 tbsp
Brown sugar 1 tsp (or normal white sugar)
Salt to taste
Sesame oil 1 1/2 tbsps (or any cooking oil)
Coriander leaves 1 tbsp, finely chopped

Method

* Heat enough oil for deep frying in a heavy bottomed vessel.

* In a small bowl, add all purpose flour, cornflour, salt and ginger garlic green chilli paste and mix well. Add water and make a smooth thick paste.

* Add the washed and drained mushrooms into the batter and ensure its well coated. Place each mushroom into the hot oil, reduce flame to medium high and deep fry till golden brown. Remove the fried mushroom balls onto absorbent paper and set aside.

* Heat 1 1/2 tbsps of sesame oil in a large wok, once the oil turns hot, add the chopped garlic and stir fry for a few seconds. Add the green chillis and ginger and stir fry on high for a few more seconds.

* Add the whites of spring onions and stir fry on high for 2 mts, constantly tossing them. Add the sliced capsicum and stir fry for another 2-3 mts. They should retain their crunch.

* Reduce flame to medium heat, add the brown sugar, soy sauce, tomato ketchup, green chili sauce and vinegar. Mix well and cook for 2 mts. Add 2-3 tbsps of water and cook for a mt.

* Add the golden fried mushroom balls and combine. Toss on high flame for a mt and turn off heat. Garnish with the chopped spring onion greens and coriander leaves.
