Recipe- Prefect for Fast Sabudana Vada

Sabudana vada is an easy-to-make snack that can be included during vrat/fasting. This popular dish is made with sago pearls or tapioca pearls. Traditionally, these vadas are deep-fried, but here I am making it in an appe/paddu pan. Making them in this method is a healthier alternative. Sabudana vada is a perfect snack for Navratri fasting. This vada is also gluten-free and vegan.

Ingredients

1 cup sago pearls sabudana
2 potatoes
½ cup peanuts roasted
1 teaspoon cumin seeds
½ teaspoon ginger paste
1-2 green chilli or as per taste
Salt to taste
2 tablespoon lemon juice
3 tablespoon coriander leaves chopped
2-3 tablespoon oil

Method

- Soak sabudana in water for 30 minutes

- Boil and mash the potatoes. Take care to just cook until done and they do not turn mushy. Set aside

- Coarsely grind the roasted peanuts. Set aside

- Once the sabudana is soaked, drain the water completely. Let it sit in a colander for at least 30 minutes

- Combine the soaked sabudana, potatoes, peanut powder, ginger, cumin seeds, salt, coriander leaves and lemon juice

- Mix well and knead into a soft dough

- Heat appe pan and add a drop of oil into the appe pan

- Pinch out a small portion and roll it into a ball. Place the rolled ball into them

- Cover and cook for 4-5 minutes

- Flip and cook on the other side for another 4-5 minutes

- Repeat this process until all sides are golden. It can take 15-18 minutes to completely cook

- Sabudana vada is ready to be served.
