Refreshing orange flavoured biscuits with almonds which are heavenly delicious and unbelievably easy to prepare. Try them once, you will definitely want to make them again!
Ingredients1 cup rolled oats
1/2 cup plain flour
1/2 cup sugar
1 teaspoon orange zest
4 tablespoons orange juice
1/2 cup pomace olive oil or any neutral oil
1/2 teaspoon baking soda
1 teaspoon vanilla extract
2 tablespoons sliced almonds
Method- Grind the rolled oats in a coffee grinder.
- Whisk the olive oil and sugar using a hand or electric whisk till it becomes light and creamy. Add the orange juice, vanilla extract and orange zest. Whisk for another minute or till well combined.
- Sieve together the ground oats, plain flour and baking soda into the oil-sugar mixture. Add the sliced almonds.
- Mix everything well with your hands till the mixture comes together as a dough. If the mixture looks too dry and it’s not coming together as a dough ball, add little milk (one tablespoon at a time) to make a dough ball.
- Place this dough in the freezer for 20 minutes. This will make the dough less sticky and easy to handle.
- In the meanwhile, line a baking tray with parchment paper and keep it aside. Preheat the oven to 180C.
- Once chilled, place the dough between 2 sheets of parchment paper and roll into a disc (approximately 1/4 cm thick). Cut into round shaped biscuits using a cookie cutter.
- Place the biscuits in the baking tray lined with parchment paper.
- Bake them in the preheated oven at 180C for 12-15 minutes or till the edges turn golden brown.
- Remove from the oven and let the biscuits cool down for 10 minutes. After 10 minutes, transfer them on a wire-rack to let them cool completely.
- Store in an air-tight container. Enjoy with tea or coffee.
