Recipe- Restaurant Style Roasted Tomato Soup

This Roasted Tomato Soup is an easy to prepare soup. Most of the soup recipes calls for blanching of tomatoes or pressure cooking them. But this is an easy peasy soup recipe where you can roughly chop tomatoes, onion and garlic and keep in the oven for baking.

This is the only pre-preparation required for this recipe. Even you can do this step in advance and keep ready. Once this cools down, just blend, heat and season with your favourite spices and herbs.

Ingredients

8 medium tomatoes
7-8 garlic cloves
1 medium sized onion
½ – 1 cup water or vegetable stock (adjust as required)
1 tablespoon olive oil
salt to taste
black pepper powder to taste

Method

- Roughly chop onions, garlic and tomatoes.

- In a baking tray, add onions, garlic and tomatoes. Drizzle olive oil and sprinkle salt over them and stir.

- Bake at 200 degrees Celsius for about 40-45 minutes till everything is roasted well. Stir after 15-20 minutes.

- Remove from oven and let it cool.

- Once cooled, transfer to a mixer/blender jar along with all the juices and oil from the tray.

- Blend to a smooth puree.

- Transfer puree to a pan and bring to a boil. Adjust salt and add pepper powder to taste.

- Switch off the flame and serve.
