Sharing a very tasty, filling and healthy sandwich recipe made in Indo chinese style. This is a very simple and quick recipe that comes together with in 20 minutes. If you have chopped veggies in hand, this sandwich can be made so easily, just make sure to chop the vegetables very finely as we are going to saute in high flame for a very brief time. Adding cheese is optional here, if you are looking for a light snack you can easily skip cheese and make this onion sandwich recipe vegan too!
Ingredients8 bread slices
Dairy or vegan butter
1/2 cup grated cheese
For the filling
1 cup very finely chopped vegetables cabbage,carrot, bell pepper, corn
1/4 cup spring onion greens
1/4 cup spring onion whites
1 onion finely chopped
1 teaspoon minced ginger-garlic
1 teaspoon soy sauce
1 tablespoon tomato sauce
1/2 teaspoon pepper powder

Method
- Heat a pan and add 2 teaspoons oil. Once the oil is hot add minced ginger and garlic. Saute well for 1-2 minutes.
- Add chopped spring onion whites and finely chopped regular onins. Saute well in high flame.
- Add the finely chopped vegetables, spring onion greens and saute well in high flame for 4-5 minutes. The vegetables should retain their crunch.
- Add salt, pepper powder, soy sauce and tomato chili sauce or regular tomato sauce. Mix well and continue to cook for 3-4 minutes.
- Switch off the flame and add the grated cheese. Mix well.
- Heat a grill pan or dosa tava and spread some butter or oil. In the meanwhile take 8 bread slices and trim the edges.
- Take 2 bread slices and apply butter on both sides of each slice. Place 2 tablespoons of prepared filling on one bread slice. Spread ell. Close with other slice.
- Place the prepare sandwich in the hot grill pan. Toast from both sides till the bread turns crispy.
- Repeat the same with remaining slices. Serve onion sandwich hot.
