The cool weekends definitely makes us crave for some slurpy, delicious concoction. And when you are a chicken fan and have inclination towards coconut curries with hint of lemongrass, why not try this lip-smacking and very easy to prepare recipe of Chicken Coconut Soup.
Ingredients2 cups boneless chicken cut into thin slices
2 cups of coconut milk
8 cups chicken stock
8 green onions cut
2 stalks lemon grass chopped
1 lemon juice
1 tsp grated ginger
1 tbsp light soy sauce
2 green chilies
2 tbsp green coriander chopped
1 tbsp cornflour
¼ cup of water (mix both together)
Salt and black pepper powder according to taste
Method* Thoroughly mix the cornflour in the ¼ cup water.
* Boil the cornflour solution and all the ingredients in the pan for 10 minutes.
* Serve hot.
