Jalebi, also known as zulbia, jilapi, mushabak and zalabia, is an Indian sweet popular all over South Asia and the Middle East. It is made by deep-frying maida flour batter in pretzel or circular shapes, which are then soaked in sugar syrup. They are particularly popular in the Indian subcontinent and Iran.
To make it more interesting for kids I had added cocoa powder and gave a jalebi new version i.e Chocolate jalebi. Kids loved it and I hope you people will also like it. So, Don’t forget to give a try and enjoy this Chocolate Jalebi.
Ingredients400 gm Sugar
200 ml Water
1/2 tsp Lime Juice
1 Cup All Purpose flour/ Maida
1/4 Cup Sour Curd
1 tsp Baking Powder
Water As Required
1 tsp Cardamom Powder
Desi Ghee/ Clarified Butter For Frying
1-2 Tbsp Cocoa Powder
Method* Mix the flour, sugar, yeast and cocoa powder with sufficient water to form a thick batter of pouring consistency.
* Keep it aside for half an hour.
* Boil the sugar with 1 cup of water in a pan on high heat, stirring continuously, till the sugar dissolves.
* Once the sugar syrup come to the boil, simmer for about 5 minutes till the syrup reaches one string consistency.
* Add saffron and cardamom and mix well. Turn off the flame.
* Heat ghee or refined oil in a broad frying pan. (To check if the oil is ready, put a drop of batter into the oil.
* If it sizzles and rises to the top of the oil, the oil is hot enough).
* Fill the Jalebi batter into a pipping bag and press out round spirals into the hot ghee.
* Deep fry on medium flame till golden brown on both sides and put them directly into the warm sugar syrup.
* Allow to soak for 2 minutes and then take them out from the syrup.
* Pour chocolate sauce over the Jalebis and serve hot.
