Roasted acorn squash is a popular fall side dish. It's very easy to make and you can add variety by using one of our favorite spice blends. Acorn squash is naturally sweet, and roasting it intensifies the flavor. By cutting the squash into rounds or half-circles, there is more surface area which browns and becomes extra sweet.
