Lauki Raita is very refreshing raita and tastes absolutely amazing when served with any curry and chapati.Lauki raita is a delicious side dish served with main course and when the lauki is in season people often make this raita in the Northern parts of India.
Ingredients
1 cup bottle gourd/lauki /ghiya/doodhi grated
3 cups yogurt
1 teaspoon mint leaves dried/fresh
1 teaspoon roasted cumin seeds powder
1 green chili chopped
salt to taste
Method
* Whisk yogurt in a bowl and set aside.
* Boil the grated bottle gourd in 1/2 cup of water.
* Remove from heat, cool, and squeeze excess water and set aside.
* In a mixing bowl add boiled bottle gourd and yogurt. Stir gently.
* Add dried /fresh mint leaves, green chillies and roasted cumin seeds powder.
* Season with salt and red chilly powder.
* Serve chilled with the main course.
