Recipe- Celebrate Any Day With Jaipuri Aloo Pyaaz Ki Sabzi

Ingredients

Potatoes Peeled – 4 Large
Onions – 4 Large Or 8 Small
Oil For Frying
Salt – 1 Tsp
Oil – 4 Tbsp
Cumin Seeds – 1 Tsp
Bay Leaf -1
Onion Paste – 3/4 Cup
Ginger-Garlic Paste – 2 Tbsp
Tomato Puree – 3/4 Cup
Green Chilies Chopped – 2
Salt To Taste
Kitchen King Masala – 1 Tsp
Coriander Powder – 1/2 Tbsp
Kashmiri Red Chili Powder – 1/2 Tbsp
Turmeric Powder – 1/2 Tsp
Garam Masala Powder – 1/2
Butter – 1 Tbsp
Greek Yogurt Or Any Thick Yogurt – 2 Tbsp
Fresh Cream – 4 Tbsp
Kasuri Methi – 1 Tbsp
Water – 1/2 Cup Or As Required
Chopped Coriander For Garnish

Method

* Cut potatoes into 4 pieces and prick them with the fork.

* Cut onions into 4 pieces. Boil water in a pot and add salt to it.

* Add potatoes and cook covered for 5-7 mins.

* Drain potatoes on an absorbent paper and set aside.

* Add onions to the same water and boil covered for 5-7 mins.

* Drain onions on an absorbent paper and set aside.

* Heat enough oil in a pan and fry potatoes and onions. Drain on an absorbent paper and set aside.

* Heat oil in another pan. Add cumin seeds and bay leaf. When the seeds start to splutter add onion paste.

* Mix well and sauté for 4-5 mins.

* Add ginger-garlic paste and green chilies. Cook for 2 mins.

* Add kitchen king masala, coriander powder, Kashmiri red chili powder, turmeric powder and garam masala Mix well and cook for 2-3 mins.

* Add tomato puree and salt. Mix well and cook covered for 5 mins.

* Add Kasuri methi along with yogurt and cream. Mix well and cook for a minute.

* Add water and mix well. Now add fried potatoes and fried onions.

* Coat well and add butter.

* Mix again and cook covered for 3-4 mins.

* Add chopped coriander and mix well. Remove from heat.

* Garnish with Kasuri methi, coriander, and drizzle with some cream.

* Serve with hot naan or any other flatbread. Enjoy.
